It mainly consists of the assemblage of the Special Cuvée, which has always embodied the high standards and style of the Bollinger house.
The Special Cuvée is made up of equal parts from the last two years of harvest. Wines of different origins, as well as different crus and vintages from the reserve, which are kept in magnum bottles with natural corks, are added and give the assemblage its always consistent style. It is a powerful and full-bodied wine with a clear and precise expression, full in the mouth, which unfolds a complex range of aromas with finesse and the appropriate length. Bollinger Rosé is therefore primarily a great wine. A complex wine, the elaboration of which is focused on thoroughness, strict standards and passion. Story: The Cuvée Bollinger Rosé is created by adding red wine. The Bollinger house and the red wine have a common history, which is expressed through the close relationship with neighboring Burgundy. Here, too, Bollinger’s high quality requirements are taken to extremes because they are based on the company’s natural, historical and strategic values. Everything begins with the selection of the grapes, which come almost exclusively from the company’s own Grand Cru locations in Aÿ and Verzenay. The excellent quality of the base wines is just as important as the work in the vineyards through to the harvest: Determination of the optimal degree of ripeness, low yields, multiple grades and destemmed This is followed by the must fermentation and maturation in wooden barrels. This red wine is added to 5 to 6% of the assemblage of the Special Cuvée, thus creating Bollinger Rosé. But the peculiarity of a cuvée cannot be described by the sum of its components, the tasting once again reveals the secret of the special Bollinger style. The red wine brings additional life to the beautiful order of the Special Cuvée.
